Nesco doesn't work except with banana chips

I've had a nesco havest for over a year and it's been a finicky machine to dehydrate with. It doesn't dehydrate ANYTHING unless I have it on the highest setting(Jerky) at 155 F and I can only do 3 trays of food with the fourth just as empty space. I had 7 trays with pitted cherries at the highest temp and most of them molded. The only ones that didn't mold were the top 2 trays. Sometimes the food comes out burnt but if I decrease the temperature it molds. What it feels like is happening is that the fan and heat get going on the machine and don't circulate down to the bottom like the information that comes with the machine claim. It seems to me that the heat and air circulate in the machine and never really leave it. I open up the top and a flood of humidity comes out and I live in Utah so there's a perceptible difference. However, at the bottom vents there's no humidity. I asked my mom how she's gotten along with the same machine for years and she tells me that she's never been able to dehydrate anything unless she has it at the hottest setting. She also tells me that she never uses more than 4 trays ever! This machine is billed as being able to dehydrate up to 8 trays but I've never been able to do that. The only thing this machine does really well is crispy banana chips. I got that plastic cross stitch netting and then the bananas don't stick to the tray. I've tried apples, pears, plums, apricots, beef jerky(takes at least 10 days), purees, tomatoes, carrots, celery, and mushrooms. The vegetables are ok but take forever to dry (2-3 days thinly sliced).
