Dried Corn Chips
(Richland County, Wisconsin)
I grew up on a farm with a family of hunters. Originally, my parents bought their dehydrator to make deer jerky. They'd always canned their own fruits and vegetables and had an extensive garden, so then they started to get more creative, and my mom started making corn chips. The recipe is really easy, and healthy.
2 cups cooked corn (I use canned corn, but you can use it off the cob).
1 tablespoon flour
Salt and pepper (We love to mix in cayenne pepper).
Puree the corn.
Mix together the pureed corn and flour.
Stir in salt, pepper, or other seasonings.
Add water if needed to get a good mix, but don't let it get runny.
Line the dehydrator trays with plastic wrap and spray with non-stick cooking spray
Dehydrate for 6-9 hours, chips should be crispy.
